Just me and my Grillfriend from RONA Capital Building Supplies for dinner tonight! I tried the reverse sear method on the Traeger Grill 575 Pro Series by smoking the steak at 200°F until it hit 100°F internal. Finished the NY Strip by searing it in a ripping hot cast iron pan with beef tallow. Then I let it take a 5-10 minute nap for a perfect medium rare.
That brown butter garlic mash though…
While your potatoes boil brown some butter with minced garlic. Strain and steam your taters and then mash’em with fresh chives, your brown butter, and sour cream. S&P to taste.
Plate up your meal with the mash, steak, topped with sauteed mushrooms and serve with something green…I had a salad.
