It’s been about 5 months since I cut most animal products out of my diet, and let me tell you…it hasn’t always been easy.
But it’s something I’m committed to, so I’ve put a lot of effort in to find tasty, vegan meals that not only are nutritious, but also don’t leave me feeling like I’m missing something.
Which brings me to one of my FAVOURITE recipes – a meaty (yet meatless) Asian dish, filled with umami flavours and delicious, fresh Shanghai noodles.
The first time I made this recipe for Mushroom Dan Dan Noodles with Yu Choy, I was hooked.
We ordered it from Good Food 3 times and liked it so much we started sourcing our ingredients locally, and making it ourselves at home.
It’s THAT good.
Unless you don’t like mushrooms, then…it’s probably not so good. Lol
